Em – here is our family recipe for Peppernuts, got this off of dad over the phone- this is the best in German Mennonite history. I baked these this last Christmas and surprised the hell out of Christine’s family (got in good with them too!)…
1 cup molassis + 1 tsp baking soda (let stand)
1 cup sour cream + 1 tsp baking soda (let stand)
3 cups sugar – mix with 1 cup shortening in mixer
3 cups flour + 1 tsp nutmeg + 1 tsp cinnamon + 1 tsp cloves
Mix sour creme + molassis + 1 tsp salt
Add flour 1/2 cup at a time. Add another 4 cups flour (for total of 7 cups) until firm (pulls away from bowl.
Chill in fridge 1 hr
Roll out like making playdough snakes and cut into small round ‘nuts’. Place on cookie sheet and bake for 7-8 minutes. Test a round – longer bake time = crunchier peppernuts.
